Sometimes simpler is better. Here’s a quick and easy one-pot recipe for cabbage soup with kale that’s great to ring in the New Year.
Cabbage and Kale Soup

Ingredients
- 2 tablespoons margarine
- 1 Medium onion (1 cup, 5 oz)
- 1 cup ham, diced
- 1/2 head cabbage, shredded (1 lb, or 6 cups)
- 4 Small kale, leaves, cleaned and torn, thick ribs removed (1 oz)
- 2 Cans Swanson 33% less sodium chicken broth (15 oz cans)
- dash black pepper
Directions
- Melt margarine in large, heavy pot. Add onion, turn burner to medium and cook until onion is translucent, about 10 minutes. Stir occasionally.
- Add ham, saute and stir until ham is heated.
- Add cabbage and kale and stir to combine.
- Pour in chicken broth and stir. Add dash black pepper. Turn to high, heat until boiling. Turn heat to low and cook gently simmering for about 30 minutes until cabbage is tender.
